An Enlightenment of Cooking Expression

It can be very frustrating when you are trying to follow a recipe, but you don't understand the cooking terms used. Sometimes even instructions on a packet of pasta can confuse you – what does cook until “al dente” mean? So, let's have a look at some basic cooking terms and the language used in recipes: - 

Al dente – This term is often used with pasta and literally means “to the tooth/bite”. Boil the pasta until is tender but still has some “bite”, not soggy and falling apart. Packet pasta usually takes 5-10 minutes in boiling water. 

Baste – This term is often used when roasting chicken or cooking meat in a marinade. You will need to regularly “baste” the meat with the juices or sauce to keep it moist. You can use a spoon to spoon the juices or sauce over the meat or you can use a “buster” which is a bit like a syringe or bulb. 

Beat – A term often used in cooking or baking. You may be instructed to beat and egg – simply crack an egg into a bowl and beat (stir rapidly) with a fork or whisk to combine the yolk and white. Blanch – A recipe may call for blanching vegetable. This simply means to plunge them into boiling water for about a minute.

Cream – Cake recipes often instruct you to cream the butter or margarine with the sugar. Beat them together either with a wooden spoon or electric mixer until they are well combined and the mixture has turned a paler color. 

Dice – If you are instructed to dice meat or vegetables, it means that you should chop into uniform squares. 

Fillet – This word can either be used as a noun or a verb. A meat fillet is a good quality piece of meat which has been “filleted”, had the bones removed. Julienne – This term is used with vegetables. Julienne carrots are carrots which have been chopped into matchsticks or strips. 

Marinate – To coat a piece of meat or fish in a sauce usually overnight or for a few hours in the fridge. The meat will take on the flavors from the sauce. 

Pare – Remove the skin from fruit or vegetables. 

Peel – Remove the skin from fruit, vegetables or prawns. 

Poach – To cook in liquid. Poached eggs are cooked in boiling water and poached fish is often cooked in hot milk. 

Puree – To puree a vegetable or fruit is to blend it until it is as smooth as baby food. Use an electric blender. 

Sauté – You can sauté vegetables and this means to fry in hot oil over a high heat for a short amount of time. 

Season – To flavor with salt and pepper. 

Simmer – This term is often used with sauces or recipes like curry or chili. It means to bring a sauce to boiling and then turn down to a level where the sauce is bubbling but not boiling. 

Stiff peaks – If you are instructed to beat cream or egg whites until stiff peaks are formed, then you need to whisk or beat until the mixture forms peaks which do not collapse and you could even turn the bowl upside down without the mixture immediately falling out. 

Stir-fry – To stir-fry is to cook meat and/or vegetables in a wok at a high temperature. Stir-fry packs can be found in supermarkets and all you have to do is fry them briefly in hot oil in a wok, add sauce or spices and serve with noodles or rice. 

Whisk – Use an electric whisk or a hand whisk to beat something like cream.

Corum has enlarged its iconic Admiral's Cup line with a new boldly designed model – the Challenge 48 Black Flag.

Corum Admiral's Cup Challenge 48 Black Flag - Made for Extremes

The new Corum Admiral's Cup is created in deep black and luminescent blue. You will not see the bright colors of the nautical pennants featured by other watches of the line.

The signature 12-sided case of the Admiral's Cup Challenge 48 "Black Flag" is crafted in black titanium and measures 48 mm in diameter. Titanium is highly appreciated by watchmakers for its superb resilience and lightness. Thus, the case produced from titanium has minimized weight and offers reliable protection to the movement.

The Challenge 48 "Black Flag" is equipped with a robust automatic chronograph movement – CO-753 caliber, the supreme precision of which is approved by COSC chronometer certification. The movement, beating at a frequency of 28,800 vibrations per hour, provides the chronograph function in addition to hours, minutes, seconds and date. One more advantage is a 42-hour power reserve. The movement reveals the special Corum finish. The oscillating weight is engraved with the brand's name.

The imposing case construction features stylized black titanium lever-pushers positioned at 2 and 4 o'clock and protected by the brand's exclusive locking system. The black titanium screw-down case-back reveals a raised engraving of the Admiral's Cup Trophy. The case also incorporates a black vulcanized rubber bezel and convex anti-reflective sapphire crystal. The black titanium crown is engraved with the Corum key. The timepiece is 300-meter water-resistant.

The black Cotes-de-Geneve-decorated dial displays chevrons coated in blue luminescent material, the same as the faceted hour and minute hands. As for the chronograph seconds-hand, it is covered with deep black lacquer. Being positioned in the center of the dial, it features the Corum key as a counterweight.

The small chronograph minute counter is found at 3 o'clock, the hour counter at 6 o'clock and the small seconds counter at 9 o'clock. The counter hands shine due to the use of a specific blue Superluminova, creating a distinctive contrast with the black dial, and providing supreme readability. The date function is shown in a large window at 4:30.

The flange features 12 very discreet nautical pennants marking the hours, the characteristic symbol of the Admiral's Cup collection.

The Admiral's Cup Challenge 48 "Black Flag" is secured to the wrist with a black vulcanized rubber strap fitted with a black titanium pin buckle engraved with the brand's name.

The extreme sports chronograph will be available in a limited edition of 100 pieces to be distributed exclusively in the United States. The timepiece is to be presented in a lead launch by Tourneau at an event to be held on November 20 at its King of Prussia, PA location.

A Little Bit of History Behind Chef Coats…

Modern day chef coats are available in a multitude of styles and colors to suit anyone’s tastes. But it wasn’t always that way things were. Whether you’re a chef, cook, or simply appreciative of food, you’ll be interested to know how the chef ensemble evolved over time.

The chef coat and chef uniform developed mostly out of necessity, with each feature having a specific purpose. Many Chef Coats and jackets are double-breasted and easily reversible to conceal stains and spills. The chef coat’s double-layer of cotton is meant to insulate chefs against the heat from ovens, grills, and stovetops as well as guard them against hot splatters and hot liquids. The knotted cotton buttons found on many chef coats were designed to hold up to frequent wash and dry cycles, as well as stress and wear and tear from daily use. Chef coats must be sturdy and practical. To accent a chef coat, chefs sometimes chose to wear a neckerchief. Nowadays chefs wear neckerchiefs to enhance and achieve a more “finished” chef look. These neckerchiefs evolved from the cloths chefs used to drape around their necks to wick away sweat while they worked in extremely hot kitchens.

The chef coat took on a more modern look beginning in the 1800’s, when chef Marie-Antoine Carême changed the standard chef coat color from grey to white, believing it demonstrated cleanliness of the kitchen. Carême also pioneered the beginnings of double-breasted jackets and differences in hat sizes. Chef coat sleeves are now available in a variety of sizes as well; pastry chefs wear short-sleeved chef coats and chefs wear ¾ length sleeved chef coats for ease and comfort. Chef Coats are also available with French Cuffs, which add two layers of protection against grease spatters and hot liquids.

Even in this day and age, the chef’s uniform is still a symbol for cleanliness and professionalism. There’s a little piece of history in every chef coat and chef hat as modern day fashions are still similar to the ones that originated more then 400 years ago. Since the 1980’s, non-traditional chef coats and chef attire have become increasingly popular. Many new options include pinstriped pants, denim jackets, or novelty printed attire such as flags, pasta, and Chili Peppers. Chefs can now express their individuality and enjoy comfort at the same time.

You might choose to take advantage of the new styles, colors, sizes, and options available in chef coats and attire. Whether you prefer traditional white chef coats or multicolor pasta patterned pants, there are styles and options for everyone. The chef uniform is still evolving and we’ll have to wait and see what exciting chef coat options the future might hold.

If You Like Garlic You Will Love These Gadgets

No kitchen is complete without a few accessories all developed for the sole purpose of extracting the delicious flavor of garlic. No matter if a person is of an Italian descent, an Italian food lover, a Professional Chef, or a regular person who likes the taste of garlic, the proper garlic tools are necessities. Garlic is a strong smelling and tasting, and specific garlic gadgets make the cloves easier to peel, crush, chop, press, roast, and grate.

Garlic is an ingredient present in many recipes. Since it can have a strong flavor, it is sometimes used in small amounts. However, there are many people who love the taste of garlic and can't seem to get enough of it. For these people, garlic can be added to recipes in bulk. Since garlic must be removed from its skin before it is used, several tools can assist in making this sometimes difficult job much easier.

Most garlic tools can be purchased for a relatively small amount of money, some as little as a few dollars. However, there are quite a few tools which all do different things to a clove of garlic, and a person may or may not need all of them. The need for the tools depends on how much garlic a person tends to use in their daily or weekly cooking.

Garlic Peeler
No matter if a single garlic clove or a whole head of garlic is being used for a recipe, everyone can benefit from a garlic peeler. Anyone who has ever tried to peel individual garlic cloves using their fingernails knows how tedious it can be. A garlic peeler can greatly speed up the peeling process and it is very easy to use. By placing a clove or garlic in a garlic peeler, the skin of the garlic sticks to the peeler and the inside of the garlic clove is left for cooking. Using this tool will speed up the garlic peeling process and at the same time it will alleviate the everlasting garlic smell that can remain on fingers.

Garlic Roasters
True garlic lovers should not live without a garlic roaster. While a piece of Aluminum Foil can serve as a makeshift garlic roaster, an official roaster, made out of a Terra Cotta plate, a rounded lid, and ventilation holes, is the best way to roast a head of garlic. Placing an entire head of garlic (with the top cut off) in a roaster and drizzling it with Olive Oil, salt and pepper, and baking for about one hour will yield a delicious, soft head of garlic. Individual garlic cloves can be squeezed out of the head and spread directly on a cracker or a piece of bread for a delicious treat.

Garlic Slicers
It's very difficult to cut garlic into very thin pieces using a knife, and it takes a lot of practice and experience to slice garlic in an efficient manner. So, if a large number of garlic slices is needed for a recipe, a garlic slicer can come in very handy. Garlic slicers ensure that pieces of garlic are uniform in shape and thickness, and they are as easy to use as cheese graters!

Garlic Keepers
Most people come home from the grocery store with a bag full of garlic heads and throw them in the refrigerator. This, however, is not a recommended place to store garlic. In fact, garlic should not be stored on a kitchen counter either since direct sunlight is not good for it. Garlic keepers can be cute accessories to add to any kitchen, as they come in many styles. Storing heads of garlic in a garlic keeper allows the garlic to remain in a cool, dry place away from sunlight.

Garlic Press
Simply chopping a clove of garlic into a million pieces with a knife and a Chopping Board does not produce the same effect as a piece of garlic that has been put through a garlic press. A garlic press is a tool that squeezes the garlic and presses it into tiny pieces. Some recipes call specifically for pressed garlic, and there is really no way to obtain pressed garlic without using this specific tool.

There are numerous other garlic tools and gadgets available, and most are very inexpensive. The best way to determine what is needed in a specific kitchen is to evaluate the daily, weekly and/or monthly garlic consumption in a household, and judge what tools would make preparing the garlic easier for the cook.

Low Carb Heart Healthy Cooking

Before cooking meat, select portions of meat, which have minimum fat. On the other hand, if you have chosen parts with meat, cut out those parts, which contain meat. Another substitute for meat is fish. Fish does contain fats, but it is low in saturated fats. In addition, fish oil is good for health. You can eat baked, boiled, or grilled fish.

Cut down excessive use of salt in the food so that the sodium levels in the blood remain stable. Use more of heart healthy herbs and spices to make the food even tastier. Here are a few more recipes for a carbohydrate addict's heart healthy diet. Try boiled Brussels sprouts sprinkled with finely chopped onion, salt, pepper and a dash of lemon. It is not only tasty but also nutritious. If you are ordering starters in a restaurant, which constitute of breads made from white flour, go for whole wheat bread instead. White flour bread has nothing but carbohydrates, which your body does not need. Again, instead of eating white rice eat brown rice, which is healthier. A heart healthy chocolate cake recipe would me a chocolate cake stuffed with pieces of carrots, apples, etc.

If you don't want your kids to have heart problems in the future, try educating them since childhood about the importance of eating healthy foods. Some heart healthy activities for kids could be quizzes, which educate them about the right foods, the importance of exercise etc.

How to Make Great Espresso on your Bean to Cup Machine

Nowadays you don't have to be an espresso expert nor have received training on a traditional espresso machine to make great tasting coffee. The time it takes to make an espresso with an automatic bean-to-cup system may vary, so your best indication that all is well lies in the appearance and consistency of the crema. If the crema looks pale and thin, you need to decrease the grind size to enable better extraction. (See the model instruction manual on how to do this). Once this is set you probably won't have to change this again unless you change the type of coffee bean used.

2/ Cleanliness.

It is important that you clean your system regularly using recommended bean-to-cup cleaning tablets and solutions and following the automatic cleaning procedure as directed in the user manual. This is absolutely vital as you will not get great tasting espresso from a dirty machine! A sure sign your machine needs cleaning is a bitter taste and an oily film on top of the coffee.

3/ Bean quality.

Always invest in good quality beans. Be wary of cheap blends, which may contain added vegetable oils and liquids to increase the coffee weight - these will clog your machine and give flat oily coffee.

If your machine does not have an automatic frother then follow the tips below.

Tips on foaming milk by hand

1. First pour very cold semi-skimmed milk into a stainless steel jug either with straight sides or sloping inwards towards the top.

2. To steam the milk, insert the steam nozzle to nearly the bottom of the jug, open the steam valve fully and rotate the nozzle around in the milk for 5-8 seconds. The bottom of the milk jug should start to feel warm to the touch.

3. Lower the jug until the nozzle is just below the milk surface; when the surface just begins to froth, place the nozzle slightly lower in the milk to one side of the jug, and turn the steam down. The milk will start to 'roll', a deep purring sound signifies the milk is steaming, and a few seconds is all that is needed for the milk to rise in volume.

4. When fine smooth foam has just formed, close the steam valve and put the jug aside until ready to use. Always take care to stop frothing before big airy bubbles form - if visible then bang the bottom of the jug several times on any hard surface to 'knock out' the air.

5. Expel steam from the steam nozzle into a cloth to clean any milk in the tube, and wipe off all milk residue with a clean damp cloth or anti-bacterial wipe.

Follow these tips and you can be sure of great tasting espresso coffee products every time.
